Spinach and Feta Couscous Salad
- 1 1/2 C. water
- 1 tsp. extra virgin olive oil
- Dash salt
- 8 grinds of fresh pepper
- 1/2 C. mushrooms, sliced
- 1 C. dry couscous
- 1/2 red onion, chopped
- 2 1/2 C. fresh spinach, rinsed thoroughly
- 1 1/2 oz. feta cheese, crumbled
In a 2 qt. sauce pot with lid combine olive oil, salt, pepper and mushrooms saute on medium heat for 2 minutes. Add water and bring to a boil using high heat. Once the water boils add couscous and onion, cover the sauce pot with the lid and remove from heat, allow to stand 4 minutes.
In a large bowl combine the spinach and feta. After the couscous mixture has stood for 4 minutes combine in large bowl with spinach and feta.
Serve warm or chilled.
