  • 4 T. extra-virgin olive oil
  • 1 bunch scallions, sliced
  • 1 5-oz. package baby spinach
  • salt
  • pepper
  • 8 large eggs
  • 4 T. whole-wheat breadcrumbs
  • 1/2 C. crumbled feta cheese

Preheat the oven to 450°F. Heat 2 T. olive oil in a medium nonstick ovenproof skillet over medium-high heat. Add the scallions and spinach and cook, stirring, until wilted, about 4 minutes. Stir in 1/2 tsp. salt, and pepper to taste. Remove from the heat. Whisk the eggs, 2 T. breadcrumbs, 3/4 C. water and 1/2 tsp. salt in a large bowl. Add the egg mixture and feta to the skillet and stir to combine. Sprinkle with the remaining 2 T. breadcrumbs. Transfer the skillet to the oven and bake 15 minutes until the frittata is set and the top is golden.
