  • 2 C. brown lentils
  • 8 C. vegetable broth
  • 1 onion, diced
  • 2 stalks celery, chopped
  • 1 tsp. dried thyme
  • 1 T. oregano
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 (14 oz.) can diced tomatoes, with juice
  • 1 bunch spinach leaves, stems removed
  • 2 T. lemon juice
  • 1 C. feta cheese, crumbled
