Spinach and Feta Pie

We are an Italian family, and we love our spinach. This is a fast and easy way to use spinach for breakfast or lunch. You can eat a slice alone or serve it with a crisp salad or a tomato onion salad.

  • 1 10-oz. pkg. frozen chopped spinach, thawed and squeezed to drain
  • 1/2 C. crumbled feta cheese
  • 4 med. green onions chopped
  • 1/2 C. Bisquick, baking mix
  • 2/3 C. milk
  • 1/4 tsp. salt and pepper
  • 1/4 tsp. garlic powder

Heat oven to 400 degrees. Grease a 9-inch pie plate. Mix spinach cheese and onions in a bowl. Pour into pie plate. Stir remaining ingredients until blended. Pour over spinach mixture. Bake 30-35 minutes or until knife comes out clean. Let rest 5 minutes before serving. Cut into 6 or 8 slices.
