  • 1/2 C. butter
  • 2 tbs. butter, melted
  • 3 cloves garlic, chopped
  • 1 yellow onion, chopped
  • 1 (10 oz.) package frozen spinach
  • 6 oz. feta cheese, crumbled
  • 8 oz. Cheddar cheese, shredded
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 1 (9-inch) deep dish pie crust
  • 4 cage-free eggs, beaten
  • 1 C. whole milk

Preheat oven to 375 degrees F.

Warm 1/2 C. butter over medium heat in a large skillet. Add garlic and onion to pan. Cook for 7 minutes or until well browned. Mix in spinach, feta, 1/2 C. Cheddar, salt and ground pepper. Brush crust with 2 tbs. melted butter and top with vegetable mixture.

Combine eggs and milk in a medium bowl. Whisk until ingredients are well blended. Pour mixture into pie shell.

Bake for 15 minutes. Top with remaining cheddar and bake for 35 minutes or until set. Allow quiche to cool before serving.
