Spinach and Ham Omelet
Serving Size / Yield
- 2 eggs, separated
- 1 Tbs milk
- 1⁄2 C shredded spinach leaves
- 1/2 C cubed ham
- 1⁄4 C grated cheddar cheese
Combine egg yolks with the milk in bowl. In a separate bowl, whisk the egg whites to medium soft peaks, then gentle fold into other egg mixture.
Immediately spray a small non-stick frying pan and place over medium heat. Add spinach and cook for 1-2 minutes, then remove from pan. Clean, re-spray, and reheat pan.
Mix ham, spinach, and cheese with egg mixture, then pour in in pan and cook for 2-3 minutes. Remove and serve.
