  • 1 teaspoon of oil
  • 2 cloves of garlic, sliced
  • 5-6 large handfuls of fresh spinach
  • salt and freshly ground pepper
  • 1 cup of shredded mozzarella
  • 1-2 tablespoons of butter
  • 10 slices of bread of your choice

Directions

First, in a small pan, heat up the oil over medium heat and cook the garlic and the spinach. The garlic should be cooked long enough until the smell arises and until it becomes soft. Avoid browning the garlic. The spinach should be cooked long enough until it becomes wilted. Then remove the spinach from the heat and season with salt and pepper to taste.
Next, heat up a non-stick pan on medium-low heat. Butter the slice of bread and place it in the pan butter-side down. Then sprinkle a generous amount of mozzarella, spinach, and more mozzarella. Butter the other slice of bread and place it on top of the cheese, butter-side facing out. Make sure to repeat this step until there is no more bread left.
Cook the sandwich slowly on medium-low heat until it becomes golden brown and toasty. Once most of the cheese is melted, it is now time to flip the sandwich. Carefully flip the sandwich and continue grilling. Since the second-side grills a bit faster, turn the heat down to low and keep a close eye on it so it does not burn. When the sandwich is toasty and brown, remove it from the pan, and enjoy it hot!
