  • 8 C. day old bread, 1-inch pieces
  • 1 C. fresh baby spinach, chopped
  • 8 crimini mushrooms, sliced
  • 1/2 C. sun dried tomatoes, chopped
  • 9 eggs
  • 1 1/2 C. Gruyere cheese, shredded
  • 1 oz. finely grated Parmesan cheese
  • 3 C. milk
  • 2 tsp. dijon mustard
  • 1/4 tsp. nutmeg
  • 1 tsp. salt
  • 1 tsp. pepper

Butter the inside of a 9x13-inch baking dish. In a large bowl, whisk together eggs and milk. Add in mustard, salt, pepper, and nutmeg. Place bread in the bottom of the prepared baking dish. Sprinkle with mushrooms, spinach, cheese, and tomatoes. Pour the egg mixture on top of the bread. Sprinkle with Parmesan, cover, and refrigerate overnight. Preheat your oven to 350°F. Bake Strata for 35 minutes. Let cool for five minutes and serve warm.
