  • 2 lb. fresh spinach
  • 1 (16-oz.) ricotta cheese
  • 6 Tbs. Parmesan cheese, divided
  • 2 egg yolks
  • 4 Tbs. butter
  • Salt and pepper to taste

Preheat your oven to 350 degrees F. Boil water in saucepan for spinach. Add the spinach to the boiling water and cook for 1 minute. Remove from the water and put it in ice water to stop the cooking. Drain spinach. Place spinach in a big bowl, add ricotta, 4 Tbs. Parmesan cheese, egg yolks, and salt and pepper to taste. Mix well. Use 1 tsp. of mixture to shape the gnocchi gently in your hands. Butter a casserole dish and lay all the gnocchi in it. Sprinkle remaining Parmesan cheese. Cook for 15 to 20 minutes. Serve with a pesto sauce.
