  • 1 box Eden Foods Kamut Spirals
  • 1 box frozen chopped spinach
  • 8 oz. skim ricotta cheese
  • 15 oz. can fire roasted diced tomatoes
  • 1 sm. jar roasted red peppers

Cook pasta as directed on package. Three minutes before the pasta is done cooking, add spinach to pasta and water. Drain pasta and spinach. Place back into pot, add ricotta cheese, tomatoes and red peppers. Mix well.
