Spinach and Strawberry Salad with Peppery Basil Vinaigrette
Ingredients
- Salad:
- 1 lg. bowl spinach
- 1/2 onion, thinly sliced
- 1/2 C. havarti cheese, grated
- 1/4 C. sliced, toasted almonds
- 1 C. sliced strawberries
- Dressing:
- 1 lg. handful fresh basil
- Pinch salt
- 1 Tbs. black pepper
- 1 clove garlic, roughly chopped
- 1 sm. shallot, roughly chopped
- 2 tsp. Dijon mustard
- 1 Tbs. honey
- 1 C. white balsamic vinegar or your favorite
- 2 C. salad or olive oil
Directions
For the salad:
Put the spinach in a large bowl and top with rest of ingredients.
For the dressing:
Place all ingredients except for the oil in a blender and mix well. Slowly drizzle in the oil. Adjust the salt and pepper for your taste. This vinaigrette will stay good for up to a week in your refrigerator. It may separate, that's ok, just mix well before using.
