Spinach and Strawberry Salad with Peppery Basil Vinaigrette

A great salad for summer with a wonderful dressing.

Ingredients

  • Salad:
  • 1 lg. bowl spinach
  • 1/2 onion, thinly sliced
  • 1/2 C. havarti cheese, grated
  • 1/4 C. sliced, toasted almonds
  • 1 C. sliced strawberries
  • Dressing:
  • 1 lg. handful fresh basil
  • Pinch salt
  • 1 Tbs. black pepper
  • 1 clove garlic, roughly chopped
  • 1 sm. shallot, roughly chopped
  • 2 tsp. Dijon mustard
  • 1 Tbs. honey
  • 1 C. white balsamic vinegar or your favorite
  • 2 C. salad or olive oil

Directions

For the salad:

Put the spinach in a large bowl and top with rest of ingredients.

For the dressing:

Place all ingredients except for the oil in a blender and mix well. Slowly drizzle in the oil. Adjust the salt and pepper for your taste. This vinaigrette will stay good for up to a week in your refrigerator. It may separate, that's ok, just mix well before using.
