This salad combines many flavors to create a rich and creamy precursor to any meal.

4-6 servings

Ingredients

  • 2 hard-boiled eggs, diced
  • 1 lg. apple, diced
  • 1 sm. onion, diced
  • 1/4 lb. bleu cheese, crumbled
  • 1/2 C. mayonnaise
  • 1/2 C. sour cream
  • salt and pepper to taste
  • 1 lb. spinach, washed

Directions

Combine all ingredients except the spinach. Break spinach into bite-sized pieces. Add salad mixture to the spinach just before serving.
