  • 2 C. spinach, chopped and cooked
  • 1 C. artichoke hearts, chopped
  • 1/2 C. onion, chopped

Preheat oven at 350 degrees F. In a large bowl, whisk eggs and egg whites. Mix in all remaining ingredients until well combined. Pour mixture in a greased 9-by-13-inch baking dish. Bake for about 40 to 45 minutes. If you desire, sprinkle with Parmesan cheese.
