  • 6 slices thick-cut bacon, chopped
  • 1/3 C. shallots, minced
  • 2 C. packed spinach leaves, sliced
  • 8 oz. cream cheese
  • 1/2 C. shredded Monterey Jack cheese
  • 1/4 C. grated Parmesan cheese
  • 1/4 C. milk
  • 1 C. sour cream

In a large skillet over medium heat, cook bacon until crisp. Transfer cooked bacon to a small bowl and drain all but two tablespoons of grease from the skillet. Add shallots and saute for one minute. Stir in spinach and cook for another minute. Transfer to a small bowl. Whisk together cream cheese, Monterey Jack, Parmesan, milk, and sour cream in the skillet. Cook over low, stirring constantly until heated through. Stir in the spinach mixture and add all but one tablespoon of bacon. Continue stirring over low heat until mixture is thoroughly heated. Transfer to a serving dish and garnish with the remaining bacon.
