Spinach Cheddar Chicken Breasts

Ingredients
- 2 whole chicken breasts, skinned, boned, halves, and flattened
- 1/2 C. flavored bread crumbs
- 2 tsp. olive oil
- 1 pkg. fresh spinach, trimmed and cleaned
- 1 sm. onion, chopped
- 2 tsp. butter
- 4 thin slices cheddar cheese
- 1/8 tsp. nutmeg
- sprig of fresh parsley, chopped
Directions
In a flat dish, press bread crumbs into all sides of chicken. In a saute pan, saute chopped onion in butter until yellow. Add spinach and nutmeg. Cook until wilted. Reserve and cool. Oil an oven-proof casserole dish. Lay breaded chicken in casserole dish. Spoon spinach mixture on each chicken breast. Top with cheddar cheese and chopped parsley. Bake in a preheated 400-degree oven for 20 minutes. Remove from oven with a spatula. Serve on heated plates.
