  • 20oz frozen spinach
  • 6 tablespoons parmesan cheese
  • 1 cup small curd cottage cheese
  • 8oz Monterrey Jack cheese, shredded
  • 3 eggs, beaten
  • ¼ cup onion, chopped
  • 2 tablespoons sour cream
  • 2 cloves garlic, crushed
  • 2 cups croutons, crushed
  • ¼ cup butter

Heat the butter on a small skillet and fry the croutons for 2-3 minutes, or until browned. Pour the croutons evenly into the ramekins. Preheat the oven to 350F. In a bowl, combine the parmesan, cottage cheese, eggs, onion, sour cream, garlic and 16oz of the spinach. Spoon this evenly into the 6 ramekins and top with remaining spinach. Top with the Monterrey Jack cheese and bake uncovered for 35 minutes, or until lightly brown and cheese is melted. Let sit for 5 minutes before serving.
