Ingredients

  • 1 tablespoon olive oil
  • 1 red bell pepper, chopped
  • 2 onions, chopped
  • 4 cloves garlic, minced
  • 12oz frozen spinach, thawed, drained and chopped
  • 1 cup frozen corn, thawed
  • 4 tablespoons chili powder
  • ½ tablespoon ground cumin
  • 2 tablespoons dried parsley
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cans diced tomatoes
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 2 cans tomato paste
  • 1 can tomato juice
  • 1 cup vegetable broth

Directions

Heat the olive oil in a large skillet and cook the bell pepper, onion and garlic for 8 minutes, or until the onions start to brown. Pour into a crockpot and stir in spinach, corn, chili powder, cumin, parsley, salt, pepper, tomatoes, beans, tomato paste, sauce and broth. Stir and cook on low for 4-5 hours.
