  • 10.5-oz. frozen chopped spinach
  • one 7-oz. box cornbread mix
  • 4 eggs, beaten
  • 6 Tbs. butter, melted
  • 1 med. onion, chopped
  • one 8-oz. carton cottage cheese
  • 1/2 tsp. salt

Thaw spinach and squeeze out all the water. Combine spinach and all remaining ingredients. Stir just until moistened. Pour into greased 9-inch pie plate. Bake at 400 degrees for 25 minutes or until lightly browned.
