Spinach Corndog made with Corn Meal

i use the recipe for cornbread on the back of the cornmeal mix I have a hot sandwich maker where i make mine which makes them quickly. They taste great dipped in mustard.

Ingredients

1 C. white or yellow corn meal
1 egg, unbeaten
3/4 C. milk
1 Tbs. melted shortening or oil
1 C. chopped fresh baby spinach leaves

Directions

Preheat oven to 400 degrees. Mix all ingredients together and pour batter into greased cornbread muffin pans or rectangular pan and bake for 30-35 minutes. Cut in squares and serve with mustard.

For hot sandwich machine use: Spray with baking spray. Once machine is hot and ready, pour batter into molds and close lid to bake for about 3-5 minutes. Repeat until all batter used.
