  • 10 oz. prepared pizza crust
  • 1 tsp. olive oil
  • 1 (10 oz.) package frozen chopped spinach
  • 8 cage-free eggs
  • 1/8 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
  • 2 tbs. olive oil
  • 1 yellow onion, sliced
  • ½ C. Cheddar cheese, shredded

Preheat oven to 450 degrees F. Brush pizza crust with 1 teaspoon olive oil and then transfer to oven. Bake for 10 minutes or until crust is lightly browned.

Following package instructions, prepare spinach. Combine eggs, salt and ground pepper in a medium mixing bowl. Whisk until ingredients are well blended. Set mixture aside.

Warm remaining 2 tbs. olive oil in a large skillet over medium heat. Add onions and cook for 4 minutes or until tender. Stir in cooked spinach and cook for 1 minute or until spinach is heated through. Remove spinach mixture from heat and stir into eggs. Mix until well blended and return mixture to skillet. Cook for 4 minutes or until eggs are set.

Spread egg mixture over crust in an even layer. Sprinkle cheese over pizza. Bake for 3 minutes or until cheese is melted. Serve warm.
