  • 200 grams feta
  • 1 cup thinly sliced leek
  • 160 grams baby spinach
  • ½ cup sour cream
  • ½ cup cream
  • 3 lightly beaten eggs
  • 2 sheets puff pastry
  • 1 1/3 tablespoons butter

Preheat the oven to 395 degrees F. Melt the butter in a saucepan and cook the leek for 4 minutes over medium heat. Add the spinach and cook until the spinach wilts then remove everything from heat. Mix the sour cream, cream, and lightly beaten eggs in a bowl. Add the feta and spinach and season with pepper. Put the pastry in a quiche pan and trim excess pastry sheet. Poke the base with a fork gently and pour in the filling. Bake for 35 minutes.
