Spinach Flatbread Pizza

- 1¾ cups Unbleached All-purpose Flour
- 1/4 cup Chopped Fresh Spinach
- 1 tsp Baking Powder
- ¾ tsp Salt
- ½ cup Water
- ⅓ cup Olive Oil, plus more for brushing
- Coarse Sea Salt
- 1 Tbsp White Sesame Seeds
- 1/2 cup Uncooked Spinach
- 1 cup Mozzarella
In a medium bowl, stir together flour, chopped spinach, baking powder, and salt.
Now make a well in center, add water and oil, and gradually stir into flour with a wooden spoon until a dough forms.
Gently knead dough on a lightly floured surface 4 or 5 times.
Divide dough into 3 pieces and roll out one piece at a time on a sheet of parchment paper into a 10-inch round circle.
Keep remaining dough covered in plastic wrap while you work.
Brush top with additional oil, add mozzarella, and scatter small clusters of spinach on top, making sure to press in slightly.
Sprinkle sea salt and sesame seeds on top.
Place pizza, still on parchment paper, onto a baking sheet.
Bake on 350 for 8-12 minutes.
When done, remove parchment paper and let cool.
Continue process with the other two pieces of dough.
Sprinkle uncooked spinach over top flat bread and serve.
