Spinach for the Spinach Hater
- 1 lb. fresh or frozen leaf spinach
- 2 chopped hard boiled eggs
- 1/2 lb. cooked and crumbled bacon
- 1/2 stick butter
- 2 cloves fresh garlic finely chopped
In pan sauté spinach, butter, and garlic on med heat. Sauté for 20 minutes, stirring frequently. Turn heat down to low, add eggs and bacon, cover and simmer for 10 more minutes. Stir and serve.
