Top your toast with spinach, eggs and anchovies for a filling morning meal.

Ingredients

  • 1 lb. spinach, cooked, chopped and strained
  • 1 Tbs. butter
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 8 slices toast
  • 8 fried eggs
  • 1/2 tube anchovy paste
  • 2 Tbs. parmesan cheese

Directions

Put spinach in a small pan with butter, salt and pepper and cook for 5 minutes. Cover toast with some spinach and put eggs on top. Squirt anchovy paste on eggs and sprinkle with some cheese. Bake in oven at 350 degrees for 10 minutes.
