Spinach Jack Chicken

Ingredients
- 2 whole chicken breasts, skinned, boned, halved, and flattened
- 1/2 C. flavored bread crumbs
- 2 tsp. olive oil
- 1 pkg. fresh spinach, trimmed and cleaned
- 1 sm. onion, chopped
- 2 tsp. butter
- 1 tsp. Pernod liqueur
- 4 slices Monterey Jack cheese
- sprig of fresh chopped parsley
Directions
In a flat dish, press bread crumbs into chicken on all sides. Add butter to a saute pan. Saute onion until yellow. Add spinach and Pernod, then cook until wilted. Cool and reserve. Oil an oven-proof casserole dish. Lay chicken in casserole dish. Spoon spinach mixture on each breast, top with Monterey Jack cheese, and garnish with chopped parsley. Bake in a preheated 400-degree oven for 20 minutes. Remove from oven with spatula. Serve on heated plates.
