Spinach Omelet

Ingredients
- 1 10-oz. pkg. prewashed spinach
- 2 Tbs. olive oil
- 1/4 C. fresh creamery butter
- 1 med. onion, minced
- 1 sm. garlic clove, minced
- pinch salt
- pinch freshly ground black pepper
- 2 slices Italian salami
- 4 eggs, beaten
- 3 Tbs. grated parmesan cheese
Directions
Wash the spinach and drain well. Place olive oil and butter in a skillet and heat. Add onion and garlic and cook slowly until light brown. Add spinach, stir, cover, and cook for 15 minutes. Add salt, pepper and salami and cook for 2 minutes. Pour eggs into spinach and stir. Cook until done to taste. Sprinkle with cheese on top.
