Spinach Patties

I created these tasty spinach patties by using a little flour and baking powder (like in a biscuit), egg for binding and Fontina cheese for taste and added crispiness. They are great as an appetizer, side dish or on their own.

  • 1 10-oz. pkg. frozen chopped spinach
  • 1 egg
  • 2 Tbs. flour
  • 1/4 tsp. baking powder
  • 1/8 tsp. salt
  • 1/4 tsp. cayenne pepper
  • pinch of nutmeg
  • 1/2 C. shredded Fontina cheese
  • 1/2 Tbs. butter
  • 1 Tbs. olive oil
  • grated Parmesan cheese

Defrost the spinach. Place spinach in a towel and wring out the excess liquid. Place spinach in a mixing bowl. Add the egg and stir together. Then add the flour, baking powder, salt, cayenne pepper and nutmeg and mix. Stir in the shredded Fontina.

In a large skillet or griddle, melt the butter and olive oil. Drop the spinach mixture by heaping Tablespoons onto the pan. Flatten slightly and cook for 3-5 minutes or until a golden brown. Turn once and cook an additional 3-5 minutes.

Place on serving platter and sprinkle with a little grated Parmesan cheese.

  • This recipe is fabulous! Although I have found that frozen spinach is too stringy for me. So, if I use frozen, I like to chop it a bit more myself first. I love this recipe for anytime.
