Spinach Quiche

This quiche is great at a brunch, but can also be served as a side dish. I have even made it in mini muffin tins for an appetizer.

Ingredients

  • 1 10-oz. pkg. frozen spinach, defrosted, and drained
  • 2 lg. eggs
  • 6 Tbs. butter
  • 8 oz. cream cheese
  • 1 C. grated mozzarella cheese

Directions

Have all ingredients at room temperature. Combine all the ingredients. Put into a buttered quiche pan. Bake at 375 degrees for 30 minutes.
