Spinach Salad with Cumin Vinaigrette
Ingredients
- 6 - 8 C. Baby Spinach
- 1/2 C. Fresh Mushrooms, Sliced
- 2 Eggs Hard-Boiled and Chopped
- 1/4-C. Real Bacon Bits or Bacon Strips That Have Been Crumbled
- 1 Small Red Onion, Thinly Sliced
- 1/2 C. Extra-Virgin Olive Oil
- 1/2 C. Lemon Juice
- 2 tsp. Ground Cumin
- 1 tsp. Sugar
- 1 tsp. Paprika
- 2 Garlic Cloves, Minced
- Salt And Pepper To Taste
Directions
Combine first 5 ingredients in a large bowl and toss. Combine remaining ingredients in a cruet and shake well. Just before serving, pour dressing over salad, toss and serve.
