This is a delicious and easy to prepare brunch recipe. You can even prepare it the day before and pop it into the oven right from the refrigerator!

Time needed

15 + Chilling min preparation + 1 hour cooking

Ingredients

  • 8 slices firm white bread
  • 4 oz. mozzarella cheese, shredded (1C.)
  • 1 10-oz. pkg. frozen chopped spinach, thawed and squeezed dry
  • 1 Tbs. butter or margarine, softened
  • 2 C. milk
  • 6 lg. eggs
  • 1/2 C. loosely packed fresh basil leaves, chopped
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper

Directions

Grease 8" by 8" glass baking dish.  Place 4 bread slices in dish; top with 1/2 cup cheese, all spinach, then remaining cheese. Spread butter on 1 side of each remaining bread slice; place in dish, buttered side up.


In medium bowl, with wire whisk, beat milk, eggs, basil, salt and pepper until blended.  Slowly pour egg mixture over bread slices. Prick bread with fork and press slices down to absorb egg mixture. Cover baking dish with plastic wrap and refrigerate at least 30 minutes or overnight.


Preheat oven to 350 degrees. Remove cover from baking dish; bake strata until knife inserted in center comes out clean, about 1 hour. Remove from oven and let stand 5 minutes before serving.


Each serving: 290 calories, 17g protein, 22g carbohydrate, 16g total fat (7g sat.), 245mg cholesterol, 569 mg sodium.
