  • three 10-oz. packages frozen chopped spinach
  • 1 lb. pork sausage, ground
  • salt, to taste
  • 1 C. onion, chopped
  • 1 C. dry bread crumbs
  • 6 eggs, beaten
  • 1/4 tsp. ground nutmeg
  • 6 Tbs. heavy cream
  • 1 C. Parmesan cheese, grated

Preheat oven to 350 degrees.  Fry sausage slowly until lightly browned.  Drain on paper towels.  Saute onion in sausage fat until tender.  Remove from pan.  Combine spinach, sausage, and onion in a bowl.  Add bread crumbs, eggs, cream, nutmeg, cheese, and salt.  Blend all ingredients.  Grease the bottom and sides of a 5x9 inch loaf pan.  Place mixture in pan and shape into loaf.  Place loaf pan in shallow pan of hot water and bake for about 1 hour and 15 minutes.  Let stand 5 minutes before unmolding.
