Spinach with Garbanzo Beans

- 2 tsp. olive oil
- 1 clove garlic, minced
- 1/4 C. chopped red bell pepper
- 1 lb. fresh spinach, well washed and large stems removed
- 1/2 C. canned garbanzo beans, well drained, rinsed and drained again.
- salt, optional
- freshly ground pepper to taste
In a large heavy-bottomed skillet, heat olive oil and add garlic and bell pepper. Saute over low heat until garlic is lightly browned and bell pepper is soft, about 5 minutes. Add spinach and cook, stirring, just until spinach wilts. Add garbanzo beans. Season with salt and pepper. Continue to cook until garbanzo beans are heated through. Serve immediately.
