Spinach with Garbanzo Beans

This wonderful vegetable side dish is popular in the south of Spain.

  • 2 tsp. olive oil
  • 1 clove garlic, minced
  • 1/4 C. chopped red bell pepper
  • 1 lb. fresh spinach, well washed and large stems removed
  • 1/2 C. canned garbanzo beans, well drained, rinsed and drained again.
  • salt, optional
  • freshly ground pepper to taste

In a large heavy-bottomed skillet, heat olive oil and add garlic and bell pepper. Saute over low heat until garlic is lightly browned and bell pepper is soft, about 5 minutes. Add spinach and cook, stirring, just until spinach wilts. Add garbanzo beans. Season with salt and pepper. Continue to cook until garbanzo beans are heated through. Serve immediately.
