Split Pea Dal
- 1 C. split peas, yellow or green
- 3 C. water
- 1 C. string beans, cut 1"
- 1 C. cubed 1" summer squash
- Sea salt to taste
- 1/4 C. coconut flakes, unsweetened
- 1 tsp. cumin (or more, to taste)
- 1/2 tsp. brown sugar
- 1/2 tsp. lemon juice
- 1 Tbs. Ghee (clarified butter)
Cook split peas 20 minutes in water. Add remaining ingredients and simmer an additional 20 minutes.
