Split Pea Dal

This is an East Indian dish that's truly marvelous. Serve with steaming hot rice and a green vegetable of your choice with chutney as a condiment.

  • 1 C. split peas, yellow or green
  • 3 C. water
  • 1 C. string beans, cut 1"
  • 1 C. cubed 1" summer squash
  • Sea salt to taste
  • 1/4 C. coconut flakes, unsweetened
  • 1 tsp. cumin (or more, to taste)
  • 1/2 tsp. brown sugar
  • 1/2 tsp. lemon juice
  • 1 Tbs. Ghee (clarified butter)

Cook split peas 20 minutes in water. Add remaining ingredients and simmer an additional 20 minutes.

  • Ghee is butter that has been melted and the clear liquid poured off the solids in the bottom of the pan. It is acceptable in most vegetarian cooking and will keep for quite a while in a covered container at room temp though I refrigerate it when not using it often. Melted stick margerine is a good substitute.
