This classic Southern dish is often made with bacon drippings. This recipes uses Canadian bacon, which is low in fat but very tasty!

Ingredients

  • cooking spray
  • 2 oz. Canadian bacon, cut into 1/4-inch dice
  • 1/3 C. yellow cornmeal
  • 2/3 C. water
  • 1 Tbs. reduced-fat margarine
  • 1/4 C. egg substitute
  • 1/3 C. skim milk

Directions

Preheat the oven to 425 degrees. F. Coat a 1 3/4 C. ramekin or baking dish with cooking spray.

Lightly coat a nonstick skillet with cooking spray. Add bacon and saute over high heat for 2 minutes. Set aside.

Place cornmeal and water in small nonstick pot. Bring to boil. Stir and cook for 1 minute, then remove from heat. Stir in margarine, egg substitute and milk in that order. Add reserved Canadian bacon. Spoon mixture into prepared ramekin.

Bake for about 15 minutes, until set and browned around edges. Serve warm.
