Ingredients

  • 4 hard-boiled eggs
  • 1 1/2 Tbs. butter
  • 1 Tbs. flour
  • 1/2 C. milk
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1/2 lb. spinach, boiled, chopped, strained
  • 1 Tbs. grated romano cheese
  • 1 C. flour
  • 1 egg, lightly beaten
  • 2 C. bread crumbs
  • 1 C. olive oil

Cut eggs in two, remove and mince yolks. Melt butter in saucepan, blend in flour, add milk and cook. Stir constantly until thick. Add salt, pepper, nutmeg, spinach and minced egg yolks to sauce and mix. Add cheese, pour into dish and let cool. When mixture is cool and firm, fill egg whites with it. Roll in flour, then in beaten egg, then in bread crumbs. Fry in oil until golden in color.
