Giardiniera is Italian pickled veggies. This particular recipe is mainly bell peppers, celery, carrots and cauliflower that will add color and flavor to any and every dish.

Ingredients

  • 4 stalks of celery, chopped
  • 4 large carrots, chopped
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 2 cups of cauliflower florets
  • 1 cup of pearl onions
  • 5 cloves of minced garlic
  • 2 teaspoons of oregano
  • 1 teaspoon of thyme
  • 2 cups of white vinegar
  • 1 cup of apple cider vinegar
  • 1 cup of water
  • 3 tablespoons of sugar
  • 1 tablespoon of salt

Directions

Fill your jars of choice with the chopped vegetables.
In a pot, combine the vinegars, water, sugar and salt; bring to a boil.
Pour the hot liquid into the jars until the veggies are completely immersed. Let cool, then refrigerate for 12 hours.
Enjoy as a side or topping to whatever dish you’d like!
