Spring Vegetable Medley
Ingredients
- 8 new potatoes
- 1 bunch fresh scallions, cut into 1-inch pieces
- 2 C. new peas
- 1-1/2 C. thin white sauce
- 1/4 C. grated cheddar cheese
- White Sauce:
- 2 Tbs. butter
- 2 Tbs. flour
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 C. liquid from cooking vegetables
- 1 C. milk
Directions
Preheat oven 375 degrees. Cook potatoes in salted water for 15 minutes. Add onions and peas and continue cooking for 10-15 minutes until vegetables are tender. Do not over cook. Drain into another pot and reserve liquid to make white sauce (see instructions below). Place vegetables into casserole dish , top with white sauce and cheese. Brown lightly in oven. Serves 6.To prepare white sauce: Melt butter, stir in flour, salt and pepper. Add vegetable liquid (or water) and milk. Stir until bubbly and thickened, about 1 minute.
