  • Salad
  • 3 C. Mixed Salad Greens
  • 2 C. Avocado, peeled, pitted, and sliced
  • 1 14 oz. can Hearts of Palm, drained and halved lengthwise
  • 1 C. Seedless Red Grapes
  • 1 C. Red Bell Pepper, stemmed, seeded, and chopped
  • 1/2 C. Tomato, wedged
  • 1/2 C. Medium Red Onion, chopped
  • 1/2 C. Chopped Walnuts
  • 2 Tbs. Bean Sprouts
  • Dressing
  • 1 C. Greek Yogurt
  • 1 1/3 Tbs. Apple Cider Vinegar
  • 2 Garlic Cloves
  • 2/3 tsp. Sea Salt
  • 1/2 tsp. Ground Black Pepper

In a large mixing bowl, toss together all salad ingredients except the walnuts and bean sprouts. Place all dressing ingredients in a food processor and puree until smooth. Pour the dressing over the salad and toss to coat. Sprinkle with walnuts and bean sprouts before serving.
