Sprouted Lentil Amaranth Soup

This lentil soup has a very powerful and amazing taste because of all the natural herbs that combined with the broth.

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. celery seeds
  • 1 tsp. thyme
  • Pinch of tarragon
  • 3 Tbs. tomato paste
  • 4 C. vegetable broth
  • 1 C. precooked Amaranth or 2 Tbs. dry grain
  • 2 medium carrots, sliced
  • 3 C. sprouted lentils

Directions

Sauté the onion and garlic for a minute and then add the spices, tomato paste, vegetable broth, Amaranth, and carrots. Bring to a boil, add lentils, and lower heat, cooking for 4 minutes or until the dry amaranth is done.
