Ingredients

  • 1/2 C cooked brown rice
  • 1 C cooked black beans
  • 2 squashes, diced
  • 6 green onions, sliced
  • 2 tsp.green pumpkin seeds
  • 2 cloves garlic, minced
  • 1 Tbs. chopped fresh oregano
  • 2 Tbs. apple cider vinegar
  • 1 lime, juiced
  • 1/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 2 red bell peppers, cut in half, cored, and seeded.
  • Ketchup, to taste

Combine all ingredients except red bell peppers in a large bowl.

Fill the red bell pepper halves with the mixture. Top with additional ketchup if needed and serve.
