Squash Cakes

You can pretty much use any vegetable to make a cake, but I think squash tastes the best!

  • olive oil
  • 2-3 Tbs. grated cheese
  • 1 1/2 lbs. squash
  • 1 C. cracker meal
  • parsley
  • 1 onion, finely chopped
  • 2 eggs
  • flour
  • salt, to taste
  • pepper, to taste

Scrape the squash lightly to remove most of the green part. Then grate with coarse grater. Salt and let stand for about 30 minutes. Squeeze out water. Mix with parsley, cracker meal, cheese, eggs and onion. Take a spoonful of this mixture at a time, roll in flour and shape into flat, round cakes. Fry in olive oil on slow fire until golden brown.
