This small twist on your average hummus recipe makes all the difference! Serve this easy butternut squash hummus with pita chips and everyone will thank you for it.

  • 1 ½ cups roasted butternut squash
  • 2 ½ teaspoon olive oil
  • 1 ½ cups cooked chickpeas
  • 2 tablespoons tahini
  • 3 tablespoons lemon juice
  • 2 minced garlic cloves
  • 2 tablespoons water
  • ½ teaspoon paprika
  • ¼ teaspoon cumin

Preheat the oven to 425 degrees F to begin. Then cut the butternut squash and scoop out the seeds. Rub 1 ½ teaspoons of oil on the inside of the squash and roast in the oven for 30 minutes. When the squash cools, scoop out the insides and add it to a food processor with the remaining ingredients. Blend until smooth. Serve with pita chips.
