Squash, Zucchini and Mozzarella Garden Medley

Ingredients
- 2 C. squash (zucchini or summer squash or a mix of both)
- 1 C. part-skim mozzarella cheese
- 1/2 C. green peppers
- 1 sm. can diced tomatoes
- 1 6-oz. can tomato paste
- 2 tsp. raw garlic
- 1/2 tsp. salt
Directions
Peel and prepare the squash and/or zucchini. Combine all ingredients in a large mixing bowl, reserving 1/4 of the mozzarella for the topping.
Pour into a greased 2-quart baking dish. Top with reserved cheese and bake for 30-40 minutes at 350 degrees.
