Squash, Zucchini and Mozzarella Garden Medley

This is a low carb delight that takes advantage of all of your summer veggies. Use part-skim mozzarella to make this a healthy option for your family and friends. Serve as an entree or side dish.

Ingredients

  • 2 C. squash (zucchini or summer squash or a mix of both)
  • 1 C. part-skim mozzarella cheese
  • 1/2 C. green peppers
  • 1 sm. can diced tomatoes
  • 1 6-oz. can tomato paste
  • 2 tsp. raw garlic
  • 1/2 tsp. salt

Directions

Peel and prepare the squash and/or zucchini. Combine all ingredients in a large mixing bowl, reserving 1/4 of the mozzarella for the topping.

Pour into a greased 2-quart baking dish. Top with reserved cheese and bake for 30-40 minutes at 350 degrees.
