Nothing says St. Paddy's day like some delicious green macarons! Use vanilla frosting to make sandwiches from these crispy soft french morsels.

  • 1 3/4 C. & 2 Tbsp. powdered sugar
  • 1 1/4 C. & 2 Tbsp. almond flour
  • 4 large egg whites
  • 1/4 C. sugar
  • 5 drops green food coloring
  • 1 container vanilla frosting

Combine the powdered sugar and almond flour in a large bowl and set aside. Whip the egg whites until foamy, about 2 minutes. Add the sugar slowly with a mixer and put in the food coloring. Whip the eggs until they have stiff peaks, about 5 minutes. Add half the flour mixture to the egg whites and fold it in gently. Then add the rest of the flour until just incorporated. Fill a pastry bag with the mixture and pipe circles onto wax paper. Let the cookies sit for 30 minutes. Preheat the oven to 300 degrees and place the macarons in the oven. Bake for 15 minutes. Once the cookies have cooled, make sandwiches with the vanilla frosting and serve.
