Starbucks-Inspired Chocolate Brownie Muffins

- 3⁄4 C good quality baking cocoa
- 1 tsp baking powder
- 3⁄4 C butter
- 1⁄2 C boiling water
- 1 Tbs vanilla
- 1 1⁄4 C sugar
- 2 eggs
- 1 1⁄3 C all-purpose flour
- 1⁄4 tsp salt
Preheat oven to 350°, and line 12 muffin tins with paper cups.
Mix together cocoa and baking powder in bowl, then add in boiling water and mix well with a wooden spoon. Add melted butter and vanilla, then add sugar and continue to mix well.
Stir in eggs with a wooden spoon. Combine flour with salt and add to the chocolate mixture. Mix well one more time to create the brownie muffin batter.
Fill each of the paper cups in the tins with batter, almost to the top.
Bake muffins for 25-30 minutes, then serve.
