In case you didn’t use and cook all the steak you bought for the holiday cookouts, here is a recipe that will put the leftover meat to great use! Enjoy these steak tacos with unique chipotle cream.

  • 4 ounces sour cream
  • 1 chipotle chile
  • 1 tablespoon adobo sauce
  • 4 tortillas
  • 1 pound skirt steak
  • 6 garlic cloves
  • 2 tablespoons olive oil
  • 1/3 cup red wine vinegar
  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon mustard
  • Salt and Pepper to taste
  • Shredded cheese
  • Salsa
  • Chopped Bell Peppers

In a plastic bag, put the steak, garlic, 2 tablespoons olive oil and 2 tablespoons red wine vinegar, ½ teaspoon pepper, 1 teaspoon salt, and mustard to marinate the steak. Coat the meat and put it in the refrigerator for 2 hours. Remove the meat from the bag and pat dry. Lightly season with salt and pepper. Spray a stove top grill with cooking spray. Put the steak on the grill over medium-high heat and grill for 6 minutes on each side. Slice the steak and cover until serving. Finely dice the chipotle chile and combine the sour cream, chipotle chile, adobo sauce and sprinkle of salt. Spread the chipotle cream in the tortillas and top with grilled steak.
Top with toppings of your choice.
