  • 3 T. olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 ¼ C. white rice
  • 2 C. vegetable broth
  • ½ C. white wine
  • 2 (10 oz.) packages frozen broccoli florets, steamed
  • 1 ½ C. feta cheese, crumbled

In a large saucepan, heat oil and sauté onion and garlic until fragrant and softened. Stir in rice and cook for a few minutes until translucent. Pour in vegetable broth and wine; bring to a boil. Immediately reduce heat to a simmer, cover, and cook for 20 to 25 minutes until rice is tender and liquid has been absorbed. Stir in broccoli and feta and serve.
