  • ½ C. onion, finely diced
  • 2 T. oil
  • 2 large eggs, beaten
  • ¼ C. soy sauce
  • 1 T. sesame oil
  • ½ lb. chicken, cooked and chopped
  • ½ C. mushrooms, chopped
  • ½ C. sweet peas
  • 4 C. rice, cooked and cold
  • 3 green onions, chopped
  • ½ C. bean sprouts

In a large skillet, heat oil and sauté onion, mushrooms, peas, and green onions until fragrant. Push blend to one side of the skillet and pour eggs into the other half. Quickly cook and scramble eggs. Combine eggs with sauté blend and add in rice, sesame oil, and soy sauce. Cook until thoroughly heated and stir in bean sprouts. Add more soy sauce if preferred and serve hot!
