  • 1 T. olive oil
  • 1/3 C. sweet potato, chopped
  • ¼ C. ham, cooked and chopped
  • ¼ C. tomato sauce
  • 2 C. chicken broth
  • ¼ tsp. ground cumin
  • ½ tsp. dried oregano
  • 2 cans of pinto beans
  • 2 dried bay leaves
  • Adoba seasoning

Sauté the cooked ham with the olive oil over medium heat in a saucepan. Add in the remaining ingredients. Let it simmer for 1 hour. Either keep the seasoned broth or drain it. Serve with choice of side.
