Stewed String Beans with Potatoes

This string bean and potato side dish is perfect for vegetarians during a holiday.

  • 2 lbs. string beans
  • 1 Tbs. parsley
  • 1/2 C. olive oil
  • 5 potatoes, cut in half
  • 2 C. water
  • 2 C. onions, chopped
  • dash mint
  • 1 sm. can tomato sauce
  • salt to taste
  • pepper to taste

Wash and string the beans. Saute onions in heated oil until golden. Add the beans and potatoes and saute together for 5 minutes. Add tomato sauce, water and seasoning. Cook slowly until the beans are done.
